I pay attention to the highest quality and traditional ingredients, but also to regionality. Demand is moving away from fast, cheap fast food and more and more towards experience gastronomy and experimental cuisine. This is reflected in my Neapolitan pizzas. We pay particular attention to sustainability and will take big steps in this direction in the future. It is also important to us to offer meatless pizzas. The selection of vegetarian and vegan pizzas makes up almost half of our menu, so we can also make a small contribution to making the world a better place.
